From light salads and spicy soups in the Bahamas and Mexico to hearty curries and fragranced fare in the Maldives, Cape Town and Dubai, these are the must-try regional dishes as recommended by our well-travelled General Managers.

Bahamian conch salad as recommended by Alex Kim, General Manager at One&Only Ocean Club.
Bahamian conch salad is by far one of my favourite native dishes from the Bahamas. It's made with fresh raw conch, lime juice, cucumber, hot pepper, tomatoes, green pepper, salt and onion. So refreshing and spicy, it is perfect to eat along with a cold beer while watching the beautiful ocean by the Dune restaurant by Jean-Georges Vongerichten.

Sautéed foie gras and prawn on brioche in a black pepper vanilla bean butter sauce as recommended by Mark Hehir, General Manager at One&Only Reethi Rah.
As a former chef, I love experimenting with flavours. This dish is created using my favourite fragrance of all time, Vanilla, which is readily available in the Maldives. The succulent combination of sautéed foie gras and prawn may sound unusual but when married together with vanilla and black pepper butter sauce creates the perfect balance of sweetness and bitterness.

This is my favourite dish without a doubt. I first sampled and fell in love with it when I worked as a hotelier in Durban, the hub for curries in South Africa. Local chefs always use home-grown spice and local produce, giving the curry an even more flavoursome and authentic taste.

Spicy Tortilla Soup as recommended by Peter L. Bowling, Managing Director at One&Only Palmilla.
One&Only Palmilla's spicy tortilla soup is one of my favourite traditional dishes; a blend of exquisite local ingredients specially created at Agua Restaurant by Executive Chef Larbi Dahrouch. This delicious soup is prepared with avocado, fresh cheese, coriander, tortilla and shredded chicken.

Heart of palm salad as recommended by Charles De Foucault, General Manager at Le Saint Géran
Heart of Palm Salad is my favourite dish and is very popular in Mauritius. It is made using the inner core of palm trees; a very versatile ingredient which is low in cholesterol and has a truly unique taste. Add avocados and tomatoes for a fresh salad or try adding mango and pineapple to give the dish an exotic twist. It gives me a sense of place every time I have it.

Aqua tots – One&Only Ocean Club
Now even the youngest guests on Paradise Island can dive into the experience of feeding exotic marine life in a shallow water lagoon. At nearby Atlantis, kids can discover marine life with a 20-minute fish feeding adventure.

Ice Cream without asking "when?" – One&Only Palmilla
Along with complimentary access to our KidsOnly Club, with all day daycare, snorkeling, tennis and cooking classes, One&Only Palmilla now offers complimentary unlimited ice cream for kids.

Snorkel adventure with the resident Marine Biologist – One&Only Reethi Rah
The in-house Marine Biologist teaches the children (9-11 years)about the most common sea life species found in the Maldives, and explains how to properly interact with sea creatures while in the water before taking the children on a snorkelling adventure at a nearby reef.

Little Gardeners – One&Only Le Saint Géran
Dressed as mini-gardeners and equipped with watering cans, children (3-8 years) can explore and discover local flora through the Garden programme. With instruction from the resident gardener and under supervision of the KidsOnly Coordinator, children are invited to indulge in an afternoon of gardening and discovery at the resort's Kids Only herb garden.

Sandart – One&Only Cape Town
Using their creativity and imagination, kids can create unique holiday masterpieces including bookmarks and postcards using coloured sand. Sandart postcards and bookmarks are created by peeling an area of the picture and then pouring on the coloured sand, which sticks to the card. The finished product makes a perfect gift for a friend back home or a holiday keepsake to remember their trip to Cape Town.

Dubai Marine Mammal Lessons – One&Only Royal Mirage and One&Only The Palm
Conveniently located at our nearby sister resort, Atlantis' Dolphin Bay offers dolphin education programs specifically tailored for children including basics of dolphin training, feeding strategies, behaviours, conservation and more.

Arawak Cay in Nassau, Bahamas
Sample delightful local cuisine at Arawak Cay, a host of native seafood restaurants along Bay Street close to Paradise Island and One&Only Ocean Club. Arawak Cay, or "Fish Fry" as the locals call it, provides excellent outdoor dining and offers truly Bahamian delicacies from conch salad and conch fritters to steamed grouper with Bahamian peas n' rice, all paired perfectly with locally brewed Kalik beer. Be sure to mingle with Bahamian families as they shop for the fresh catch of the day as well as local produce in this laid-back and inviting area.

South Africa's best kept secret, the Swartland
Less than an hour's drive from Cape Town lies the Swartland, an ancient wine region that modern day experts like Luvo Ntezo, Head Sommelier at One&Only Cape Town, are claiming produces some of the most exciting and innovative wines in South Africa. Now home to some of the most dynamic and inspiring winemakers in the world, this lesser-known territory is fast becoming the must-visit wine destination for locals and tourists alike. Private full-day wine excursions to the Swartland can be coordinated via the concierge at resort. Private tastings of Swartland labels are also hosted by Luvo at the Sommelier's Table in Reuben's, with pairings by celebrated South African chef Reuben Riffel.

A glimpse of a rare jewel

One&Only Recipe of the Month
Char grilled lobster salad with Mango, Chilli and Basil

Ingredients

• 3 cups picked basil leaves

• 120 gm lobster meat

• 60 ml light olive oil

• ½ tsp each of sea salt, black pepper, chilli

Lemon and Mango Salad
• 2 cherry tomato, quartered
• 30 gm cubed mango
• 1 lemon, zested rind only
• 60g mixed lettuce
• 10 gm shaved fennel

Chilli and Basil Dressing
• ½ Spanish onion, thinly sliced lengthways
• 30 g chopped chilly
• 60 ml (¼ cup) extra-virgin olive oil
• 1½ tsp dijon mustard
• Lime juice

Method
For the lemon and mango salad, combine the lettuce, onion, tomato, fennel, lemon rind and half the mango in a bowl and toss lightly to combine

For chilly basil dressing, combine all ingredients in a blender and process until smooth, season to taste with sea salt and freshly ground black pepper (makes 100ml)

Heat a chargrill or barbecue over high heat, cook lobster for 3-5 minutes

To serve, toss salad with three-quarters of the dressing, place into bowls and top with lobster and scatter with remaining mango. Drizzle with remaining dressing, season to taste and serve immediately
