Everywhere we look these days, it seems the grass is getting greener, crocuses are starting to pop up from the earth, pastel colours can be seen more and more in people’s homes and in what they’re wearing. All this can mean only one thing: Spring is in the air—finally. And so now, as we ease out of winter, we thought we’d bring you a newsletter filled with the rites of spring.

More than anything, we’re excited for Easter celebrations: the food, the festivities, the pageantry, the chocolate. At our resorts around the world, we will be celebrating all of that, with special Easter events for children and adults alike, as well as chocolate-centric rituals at selected One&Only Spas. When it comes to fashion, meanwhile, spring gives our wardrobes a new lease on life, something no one knows better than the divine Australian kaftan-designer Camilla Franks, whose flowing frocks feel oh-so right this season. Finally, it wouldn’t be Easter without some sweet stuff. Our recommendation for some springtime indulgence? A recipe for chewy, chocolate-y brownies from the kitchens of One&Only Cape Town.

Over the holiday weekend, our Indian Ocean retreat will host Easter celebrations from the traditional to the adventurous, beginning on 29 March with a delicious seafood and fish market dinner at our seafront restaurant La Terrasse, and continuing with a sophisticated wine dinner at our PRIME steakhouse the next night. Easter Sunday itself will see a festive Jazz brunch featuring a decadent desert buffet and extravagant display of Easter eggs, both of which are guaranteed to make the young and the young at heart swoon. Speaking of the little ones, we’ll have an Easter Bunny on hand, who’ll guide tykes on an egg hunt around the lush tropical gardens. And if your family is looking to immerse themselves a little further into local culture, we’ll also host a visit to our local Hindu temple on Easter Monday.

One&Only Royal Mirage, Dubai
The Easter Sunday Family Fun Fair at One&Only Royal Mirage will celebrate the holiday with a rambling Easter egg hunt around the landscaped property, followed by a festive family lunch and camel and pony rides for the little ones. The resort’s eight different restaurants will each offer unique spins on traditional Easter favourites throughout the weekend, and our expert Recreation Team stands at the ready to arrange family-friendly activities from tennis and football clinics to egg painting sessions and bunny races.

One&Only The Palm, Dubai
Kids staying at One&Only The Palm over Easter will be able to enjoy a range of on-property Easter celebrations, from egg colouring to egg hunting to bunny face-painting, but they’ll also get the chance to join children staying at our sister Dubai property, One&Only Royal Mirage, for the games, lunch and Family Fun Fair happening at that resort’s Al Koufa Fort on Easter Sunday itself. Meanwhile, back at One&Only The Palm there will be special Champagne lunches and dinners at our three gourmet restaurants, ZEST, 101 and STAY by Michelin-starred French chef Yannick Alléno.

One&Only Reethi Rah, Maldives
Our private-island Maldivian resort is giving you the opportunity to celebrate in your own personal style over the Easter weekend, from an eastern-looking alfresco evening of authentic Persian delights we’re calling Arabian Night at Fanditha, to a complimentary Easter cocktail party, to a kids’ and teens’ fashion show. During our a Mad Hatter’s Easter Gala Dinner on the beach, the adults in your group can enjoy live music, dancing under the stars and gourmet cuisine, plus chilled Champagne and chocolate delicacies, all whilst the little ones occupy themselves hunting for eggs. And the more active among you may find the Reethi Rah Island Triathlon, at our Beach Club, to your liking; the event includes a three-legged race, 500-metre swim, one-kilometre kayak paddle and a final four-kilometre race to the finish line. It just might make the perfect One&Only way to work off some of that Easter excess.

One&Only Cape Town, South Africa
Young and old alike will discover the magic and mystery of the holiday with a special Easter Sunday Lindt chocolate egg hunt, egg painting and sand art for the children staying with us, as well as an Easter Bunny Afternoon Tea. More chocolate will be on hand at Sunday’s Easter Buffet at our gourmet restaurant Reuben’s, while the Vista Bar & Lounge will see the Lindt chocolate flowing freely at a fondue fountain. Be sure to check out the giant bunny on display at Vista, too; it’s not for tasting, but we expect you will have had quite your fill of chocolate by that point anyway.

One&Only Palmilla, Los Cabos, Mexico
At our retreat in Los Cabos, the holiday fun begins on the Thursday before Easter, with a special kids’ Easter egg art project upon arrival and then, for the parents, welcome cocktails on the Chapel Terrace. Friday morning will see a family-friendly, One&Only-style triathlon, featuring golf on our Jack Nicklaus-designed course, tennis on our three hard courts and watersports at Pelican Beach, while the evening will bring an outdoor movie screening and snacks by the sea. The weekend itself starts with special lamb dinners at our Market and Agua restaurants on Saturday, continuing into a big Easter Sunday of eggs hunts, led by the Bunny himself, and mass held at the resort Chapel.

One&Only Ocean Club, The Bahamas
The “Bunny Tuck-Ins” at our resort on Paradise Island always prove a holiday highlight. Book now to have the Easter Bunny make a special pre-holiday bedtime appearance in your suite or villa—basket full of goodies in hand, or paw, as it were. Treat yourself to a special springtime treat—the decadent Lindt Piccolli Brownies from the pastry kitchens of One&Only Cape Town.

Even with all the chocolate eggs and bunnies and creamy pastries and cakes you may eat over the Easter holiday, we know you'll definitely want to save room for these triple-chocolate brownies devised by the star chefs of One&Only Cape Town. Combining dark, milk and white chocolates, this easy-to-make recipe will leave your kids, your guests, your spouse—and even health-conscious you—clamouring for more.

Lindt Piccolli Brownie


• 250g Butter

• 250g Lindt "excellence Surfin" chocolate

• 285g Super-fine sugar

• 4 Eggs

• 10g Vanilla extract

• 340g Cake flour

• 40g Cocoa powder

• 380g Lindt white chocolate, chopped

• 200g Lindt milk chocolate, chopped

1. Set oven to convection and preheat to 160 degrees C.

2. Melt butter and dark chocolate in the top half of a double boiler, with water simmering in the lower portion.

3. In a separate bowl, whisk together eggs, sugar and vanilla until foamy.

4. Add the melted butter and chocolate to the egg mixture.

5. Fold in the chopped white chocolate and the flour.

6. Coat pan with a non-stick baking spray, such as "Spray and Cook," and spread the batter evenly in the pan.

7. Top with the chopped milk chocolate pieces.

8. Bake for 20 minutes at 160 degrees C.

9. Remove from oven. Let cool in pan for approximately 20 minutes. Cut into rectangles, and then turn over onto cooling rack/tray.
