Sep 2012 Hero 2
For many One&Only guests, September means only one thing: Fashion. Already, fashionistas have made their way from New York to London to Milan to Paris for the crème de la crème of the Spring shows. You may be following-We know you’re watching it all—sometimes from home, often from the front row, maybe even from your favourite One&Only retreat—and so this month, we’ve devoted your dispatch to all things style-related. And we don’t just mean fashion, though there’s plenty of that: a runway report from One&Only’s Direct of Retail Preston Schroeder plus a sneak peak at our soon-to-launch Babajaan swimwear pop-up shop in the Maldives. We’re also bringing you notes on decorating, with Cape Town’s best artisanal boutiques and markets, and beauty news, with must-have Lady Primrose scents, soaps and salves from One&Only Palmilla. And, as always, there’s one of our favourite recipes; this month we bring you Nobu’s Black Cod with Miso.

Reservations at One&Only resorts can be made online at oneandonlyresorts.com or through your preferred travel professional.

From Runway to Resort
Get the scoop on the season’s best looks from Preston Schroeder, One&Only’s ever-stylish Director of Retail.

As One&Only’s intrepid Director of Retail, Preston Schroeder scours the globe looking for the latest and greatest fashion finds to bring to you at our boutiques. Along the way, he takes careful note of what he sees style-makers wearing when out and about from Rome to Reykjavik, and he explores unsung markets in even more far-flung locations. But it’s what he saw on the runways during his buying trips to New York, London, Milan and Paris that most inspired this take on the top trends for fall 2012. Here’s what he recommends for you this season:

THE PANT IS THE NEW SKIRT: Whether part of a suit or worn with a chunky knit, the pant is king. The best looks feature a fitted pant with a short, oversized T-shirt and platform shoes. On a beach holiday, try a jumpsuit—Preston’s favourites, available at One&Only boutiques, are by Missoni.

MATCHING PRINTS ARE CHARMING: This autumn it’s all about wearing the same print on both top and bottom. Preston can’t get enough of the Camilla round-neck caftans he has in One&Only shops, which can be worn with matching leggings in myriad ways.

BUILD WITH COLOUR BLOCKS: Preston loves to combine the season’s ubiquitous colour-blocking trend with the fashion pack’s continuing penchants for pattern and for neon (especially orange). He suggests pairing a bright, monochrome bag with an otherwise all-over-patterned ensemble.

ALL THAT GLITTERS IS GOLD: The rich metallic hue is everywhere, from heavily decorated brocade trouser-suits to caftans with stone-embellished necklines. Preston turns to Stella McCartney, with her gold Lurex top and matching cropped pant, for the winning medal here.

PLATFORMS’ POPULARITY GOES SKY HIGH: The platform shoe is tops this season—blissfully so, as they’re the best way to add height without sacrificing comfort. Preston’s perennial favourite is Charlotte Olympia's classic signature platform, Dolly, in One&Only boutiques right now.

OVERSIZED TOPS ARE TOPS: This growing trend is bigger than ever, but you’ll want to wear it in a way that accentuates your body. Try skinny jeans topped by a fitted tank and an oversized chiffon T-shirt. Preston loves the beautiful sequin-embellished snake-print one he’s carrying by Marie France Van Damme.

ANIMALS RUN WILD: But not in the same-old leopard-spot or zebra-stripe kind of way. This season Preston sees entire animals printed on clothing—birds on skirts, dogs on bags, and, as you can see in the Stella McCartney selection at One&Only, cheetahs on shirts.

THE WAIST IS WHERE IT’S AT: Cinched-waist 1940s-era looks that accentuate the hips are back in a big way this fall, best worn in a long fitted gown with a peplum (a short ruffle or overskirt at the waist) which emphasises the aesthetic even more. Try it with an oversized clutch.

NEON: Ultra-bright, not-seen-in-nature hues are huge right now. For a subtle flash of the stuff, Preston suggests stopping by the boutique to pick up one of Bex Rox’s gold-cuff lattice-like bracelets, woven through with neon in various shades. Totally on trend, they brighten up any outfit for day or night.

Pop Goes the Shop
Shop One&Only’s exclusive new Babajaan swimsuit collection at our soon-to-launch pop-up shop in the Maldives…and a Bochic jewellery trunk show, too.

After bringing you exclusive fashion collaborations with such notable names as Christian Louboutin, Missoni and Anya Hindmarch we’re taking our design partnerships to the next level, launching an entire pop-up boutique devoted to the stylish pieces we’ve created with cult swimwear brand Babajaan.

The shop will land in November at One&Only Reethi Rah, our endlessly beachy escape in the Maldives. But don’t worry if you can’t make it there before the pop-up closes this spring. The designs, exclusive to One&Only Reethi Rah, will also be available for you on Babajaan’s website as from November.

For this exclusive collection, Babajaan designer and founder Sandra Moleirinho and One&Only Director of Retail Preston Schroeder have created four swimsuits and three kaftans plus a selection of Panama hats made by an expert Ecuadoran weaver, pressed to your desired shape and decorated with the bespoke ribbons and trimmings of your choice. All of these Babajaan pieces, in fact, can be custom made to your specific wishes. Simply choose from a carefully curated selection of ribbons, beading and other embellishments, and we’ll make the design to order right at the boutique.
How’s that for haute beach couture?

Meanwhile, from 18 to 31 October, One&Only Reethi Rah will also see a two-week trunk show of Bochic’s oh-so-chic jewellery. This exquisite, one-of-a-kind collection that is a favourite of Hollywood and international celebrities, was curated just for you by Bochic and One&Only and includes a spectacular selection of evocative pieces just right for your holiday look, from statement rings, delicate bracelets and earrings of carved jade, eye-catching coral, rustic mammoth bone, midnight jet, white diamonds and many more largely undiscovered precious stones, all set in 18-karat gold.

Scents Memory
Recall your days in tropical paradise with Lady Primrose’s Blue Agave fragrances and beauty essentials, inspired by One&Only Palmilla, Los Cabos, Mexico.

We’ve all had that wonderful experience: You inhale a certain pleasing aroma and are immediately sent back to a fond memory of a certain place or person—the steam off of a fresh-baked baguette that brings us to a favourite Parisian boulangerie, the whiff of Chanel No. 5 that reminds us of Mum, the fresh-cut grass that takes us back to youthful summers spent in the garden, the chance encounter with some sweetly salty air that reminds us of a particular stretch of beach.

Oh, if only someone could capture the scent of a blissful seaside holiday—the freshness of the blue agave at One&Only Palmilla, say—and put that in bottle.

Actually, someone has: British bath, body and home fragrance specialist Lady Primrose has designed the decadent bath and many of the poolside amenities at One&Only Palmilla, in Mexico’s Cabo San Lucas. In each of the various soaps, salves and scrubs, Lady Primrose has made perfect use of Cabo’s natural bounty. They’ve based many of the cooling and refreshing elixirs on extracts of the local blue agave plants that dot the property, mixing it with cucumber, lavender and geranium, and others combine citrus, floral and jasmine notes into a gentle bouquet.

And now, you don’t even have to come back to One&Only Palmilla to pick up these potions (though that would be how we’d highly recommend you get your hands on them, of course, at the retreat’s boutique). No, these days, each and every one of the items is available through Lady Primrose’s online shop, offering another way for you to bring a piece of the resort—and all your memories of it—home to roost.

Of all the signature dishes chef Nobuyuki "Nobu" Matsuhisa has developed over the years—his creamy spicy rock shrimp, say, or his squid pasta with garlic sauce—it's his black cod with miso that has become the most iconic, its subtle sweetness and silken texture winning rave reviews and great acclaim at his restaurants from London to Los Angeles, Beijing to Budapest, and, of course, at his outposts at the One&Only Cape Town, as well as its sister resorts, Atlantis The Palm, Dubai, and Atlantis Paradise Island, Bahamas. Here, the chef reveals the refreshingly simple recipe so you can give it a shot at home—waiter service and sake sommelier not included, sadly.

One&Only Recipe of the Month
Try your hand at star chef Nobu Matsuhisa's beloved black cod with miso. You might just surprise yourself with how easy it is.

• 3 tablespoons mirin

• 3 tablespoons sake

• 1/2 cup white miso paste

• Six 6- to 7-ounce skinless black cod fillets, about 1 1/2 inches thick

• Vegetable oil, for grilling

• Pickled ginger, for serving

In a small saucepan, bring the mirin and sake to a boil. Whisk in the miso until dissolved. Add the sugar and cook over moderate heat, whisking, just until dissolved. Transfer the marinade to a large baking dish and let cool. Add the
fish and turn to coat. Cover and refrigerate overnight.

Preheat the oven to 400°. Heat a grill pan and oil it. Scrape the marinade off the fish. Add the fish and cook over high heat until browned, about 2 minutes. Flip the fish onto a heavy rimmed baking sheet and roast for 10 minutes, until flaky. Transfer to plates and serve with pickled ginger.

Total time: 30 minutes plus overnight marinating
Servings: 6
