  1. Mix all cake ingredients, and all cross mix separately, on first speed until smooth.
  2. Mix second speed for an additional six minutes.
  3. Boil water, sugar and raisins for one minute to make fruit mix then allow mixture to cool.
  4. Prove for one hour, fold in fruit to cake dough and prove for an additional hour.
  5. Measure 50g, shape and place in tray, prove until double in size.
  6. Pipe cross mix and bake at 180 degrees Celsius.
  7. Glace with sugar mix (100g milk and 100g sugar) when hot.
