Reuben’s Easter Hot Cross Bun Recipe


Serves 8-10 people

Method

  • - Add flour, sugar, salt, butter, water and egg to form soft dough
  • - Then add yeast
  • - Wait a few minutes and then add mixed peel, raisins and sultanas
  • - Allow the dough to proof for a little while
  • - Portion into any size of either 20, 25, 30, 35 (Depending how big or small you want to make the hot cross bun)
  • - Proof for another 15 minutes and pipe cross on top of bun
  • - Allow to bake at 160 degrees Celsius (320 Fahrenheit) until golden brown

920g Cake flour
58g Sugar
58g Yeast
10g Salt
138g Butter
95g Mixed peel
95g Sultanas
30g Raisins
4 Eggs
325ml Water

Paste to make Cross

100g Cake flour
60ml Milk
