Josh Niland is one of Australia’s leading chefs known for his unique and ground-breaking approach to showcasing fish, which has gathered him international recognition. Niland opened Saint Peter in 2016 (winning 2 Hats in the Good Food Guide Awards 2019) as well as Fish Butchery in 2018, a modern fishmonger that embodies all of the day-to-day practices carried out at Saint Peter.
For one night only, enjoy an exclusive opportunity to experience Josh’s sustainable approach and appreciation of Australian fish. Alongside Executive Chef Nancy Kinchela, Josh will present a unique dinner for all guests using the whole fish paired with the finest regional ingredients. Each dish will be matched with Delamotte champagnes. Guests will also have the opportunity to meet Josh and learn of his craft and passion.
