Banana Malva - One&Only Cape Town

Method

  • - Set oven to 160ºC.
  • - Whisk eggs, jam and sugar together.
  • - Melt butter and milk together.
  • - Mix dry ingredients together. Add to egg mix alternating with warm milk mixture.
  • - Stir in banana pulp.
  • - Lastly add the vinegar.
  • - Pour mixture into greased baking dish and bake for 25-30 minutes until cake tester comes out clean.
  • - While baking, heat cream, butter and sugar in a pot. Once malva is baked, pour warm syrup over the warm malva as it comes out the oven.

Serve warm with a scoop of vanilla ice cream.

The recipe is suitable for family-style cooking and serves 8 to 10 people.

4 Eggs
25g Apricot Jam
125g Butter
150ml Milk
7g Bicarb
2g Salt
250g Flour
80g Ripe Bananas, Mashed Up
8g Vinegar

Syrup
1000g Cream
300g Butter
500g Sugar
