Miso Salmon Salad - One&Only Cape Town

METHOD:

  1. Rub the salmon with red miso paste and grill to medium rare, or to your liking, and put aside to cool.
  2. Using one half of an avocado, slice it neatly and fan it out, then set aside till plating.
  3. Create the dressing by mixing the ingredients together and blending with a food processor or blender.
  4. Mix together: Baby herb salad leaves, quartered cooked baby beets and the dressing.
  5. Plating: Place the salad mix in a bowl, break the salmon into chunks and place randomly on top of the salad, finally place the avocado neatly on top. Garnish with edible flowers.

DRESSING INGREDIENTS

6 Tbsp Olive Oil
2 Tbsp Whole Grain Mustard
2 Tbsp Honey
1 Tbsp Cider Vinegar
Juice of 1 Orange
Juice of 1/2 Lemon
1/2 tsp Salt
1/4 tsp Black Pepper
