  1. Rinse all the vegetables and herbs.
  2. Slice the onion and bell pepper, and cut the cherry tomato into two. Peel and chop the garlic. Chop up the thyme and cut the curry leaves into fine julienne slices.
  3. Dice the smoked beef bacon.
  4. Deep fry half of the sliced onion until golden brown.

For the tomato rougaille

  1. Place a pan onto a low heat and add olive oil. Add half of the chopped onion, thyme and garlic and stir. Cook for five minutes. Then add the bell pepper, season with salt and pepper, add the cumin powder and curry leaves and cook for 20 minutes on a low heat, stirring constantly.
  2. After 20 minutes remove from the heat and add the cherry tomato and leave aside for ten minutes. Blend with a hand mixer, adding the chives and coriander. Check the seasoning.
  3. Pan fry the diced beef bacon and keep warm.
  4. Poach the egg.
  5. On a plate, place the egg, top with the tomato rougaille, add the beef bacon on top and garnish with fried onion, chives and coriander. Serve hot.

3g thyme
3g curry leaf
20ml olive oil
1g cumin powder
20g coriander
20g chives
