Commanding one of the resort's most iconic seaside locations, this open and airy space is beautifully designed with an earth-to-sea theme, perfect for both indoor and al fresco dining on all-day menus of authentic Mexican specialties. Inspired by his extensive travels throughout Mexico, Moroccan-born Chef Larbi Dahrouch presents a spectacular, seasonally driven menu, with some items changing daily depending on the fresh catch and produce of the day. Interactive dining is showcased here, including fresh, hand-made tortillas, authentic moles and signature guacamole and ceviche made tableside.

Born in Tangiers, Morocco, Larbi Dahrouch arrived in France with his family in 1969 where he was the apprentice of legendary French Chef, Jean-Louis-Palladin at the Table des Cordeliers restaurant in Condom, South France. When Palladin relocated to the U.S. in 1979 to open Jean-Louis at the Watergate, Dahrouch followed and was soon promoted to Executive Sous Chef. Since 1986, he has held the title of Executive Chef at four well-known and respected restaurants. Chef Larbi has also worked in other kitchens throughout the world including Los Angeles, Philadelphia and Boston, before becoming Executive Chef at One&Only Palmilla.
Prior to Agua restaurant opening at One&Only Palmilla in 2003, Dahrouch travelled throughout Mexico to discover authentic Mexican cuisine by sampling its diverse markets and food traditions. He developed a keen understanding of regional nuances as well as how to delicately blend other ingredients into local cuisine to complement and incorporate original flavours. Many of the dishes at Agua by Larbi are Mexican-inspired and enhanced with Mediterranean ingredients, while still retaining their local authenticity. The finest local produce, fish and seafood and game are used throughout the menu, delivered daily by Dahrouch’s hand-picked roster of local purveyors.
