Tomato Mango and Avocado Salad One&Only Resorts


  • Tomato preparation
    1. - Wash and dry large tomato
    2. - Slice 1/4" thick into wedges taking care to avoid the core
  • Radish preparation
    1. - Wash and dry the radishes
    2. - Slice 1/16" thick on a Japanese mandolin and soak in cold water
  • Avocado preparation
    1. - Split and core avocado
    2. - Peel and slice lengthwise into 1/8” ribbons
  • Mango preparation
    1. - Slice the mango from the side, not too close to the core to avoid any fibre
    2. - Peel and split mango down the middle, slicing each side into two large spears
    3. - Slice the spears into ¼” wedges
  • Vinegar preparation
    1. - Blend guar gum and vinegar until puree smooth
    2. - Let is settle for 15 minutes
  • Salad preparation
    1. - Season tomatoes with salt
    2. - Mix all prepared ingredients
    3. - Splash with vinegar and extra virgin olive oil
    4. - Season well with salt and freshly ground black pepper


2 tomato wedges
6 assorted cherry tomatoes
¼ ripe avocado (cut into ¾ inch cubes)
10 radish slices
8 ripe mango (cut into ¾ inch cubes)
5 jalapenoes 1/8” Rondelles
10 micro basil leaves
200ml red wine vinegar
1.5ml guar gum
Extra virgin olive oil (as needed)
Fleur de Sel (as needed)
Black pepper (as needed)
