  1. Finely chop the tuna fillet.
  2. Mix in the extra virgin olive oil, salt, pepper, lemon zest, coriander, chili, shallot and chives, and leave to marinate.
  3. Cut the avocado into thin slices and arrange on a film wrap very close to each other, making two rows.
  4. Spoon over the marinated tuna tartar and use the film to roll the two together.
  5. Separately, mix the lemon juice with the hazelnut oil and salt to make a 'citronette'.
  6. Place the avocado and tuna roll onto a plate, spoon citronette dressing on top and serve with a dollop of sour cream on the side.


500g Fresh yellow fin tuna
30g Extra virgin olive oil
Salt and pepper to taste
1 Lemon
5g Coriander
70g avocado
5g shallot
10g chives
10g guero chili
10g Hazelnut oil
