A light and destinctive recipe from Celebrities Restaurant at One&Only Royal Mirage

Confit Salmon with Caviar, Pineapple Dressing (makes 4 portions)

Celebrities Smoked Confit Salmon


  1. Bring wine and shallots to a boil in a small saucepan over high heat. Reduce the heat to low and add the fresh salmon. Gently poach until salmon is barely opaque in centre, approximately 3 minutes. 
  2. Transfer to a paper lined plate to drain. Place salmon and shallot in a large bowl, cover and chill until completely cooled. 
  3. Make your mayonnaise, by whisking the egg yolk with the mustard and gradually adding the oil while continuing to whisk. Begin drop by drop to avoid curdling. 
  4. Add the mayonnaise, chives, lemon juice to the poached salmon. Gently mix just to combine. Season to taste with salt and pepper. This completes the farce. 
  5. Place a generously heaped tablespoon of salmon farce at the shorter end of a slice of smoked salmon. Roll up and place on a plate with the seam at the bottom. Make three portions of salmon rolls per plate. For the decoration, add the caviar on top of each roll. 
  6. For the dressing, reduce the fresh pineapple juice with the Xeres vinegar until a sauce consistency, then cool.

1L Fresh Pineapple Juice 
10g Xeres Vinegar

Salmon Stuffing: 
300g Fresh Salmon 
200g White Wine 
1Pce Lemon Juice 
1/2Bunch Chives 
100g Chopped Shallots 

50g Salmon Egg 
100g Baby Cress Salad 
20g Caviar

50g  Whole Grain Mustard 
1 Yolk Egg 
200g Olive Oil 
Salt & Pepper
