From Napa Valley to Wolgan Valley

One of Napa Valley’s most revered wineries, Opus One, will fly in to Emirates One&Only Wolgan Valley to host an unforgettable weekend of epicurean indulgence against the spectacular backdrop of the Greater Blue Mountains this October.

On 10 October, Opus One Winery will be teaming up with the chefs and sommeliers at Emirates One&Only Wolgan Valley to create a culinary tour-de-force, pairing the award-winning catalogue of wines from California’s Napa Valley with the resort’s locally-inspired cuisine. The evening will be hosted by Laurent Delassus, Vice President of International Sales and Marketing at Opus One, who will lead an interactive gourmet experience alongside Gary Olasz, Sommelier at Emirates One&Only Wolgan Valley and Executive Chef, Jason Martin. He will also conduct an Opus One masterclass to help guests build their depth of knowledge about this legendary Napa vineyard.

Guests will enjoy a bespoke menu comprising of venison carpaccio, liquorice and blueberries matched to the 2012 Opus One; a confit of blue eye trevally with Jerusalem artichoke cream, sorrel and oxtail consommé paired to the 2010 Opus One; kobe sirloin and wagyu cheeks with truffles, fondant potato and pickled hazelnut matched to the 2009 Opus One; Comte with black garlic matched to the 2007 Opus One and the grand finale, a Zokoko alto beni 68% chocolate infused with Earl Grey tea, prunes, coffee, wattleseed ice cream and chocolate malt matched with the 2005 Opus One.
