Back by popular demand, Executive Chef Brent Savage and Head Sommelier Nick Hildebrandt of the Bentley Group will return to One&Only Hayman Island this October for an unforgettable weekend of epicurean indulgence in the heart of the Great Barrier Reef. They will take guests on a culinary ‘tour de force’, featuring highlights from their burgeoning restaurant empire, including Cirrus, the new sustainable seafood restaurant due to open at Barangaroo in September.

From 27-30 October, guests at One&Only Hayman Island will have the opportunity to experience the award-winning and innovative cuisine of Sydney’s Bentley Restaurant & Bar, Yellow, Monopole and now the new Cirrus, matched to the celebrated stable of Rathbone Wines, including Yering Station (Yarra Valley), Mount Langi Ghiran (The Grampians) and Xanadu (Margaret River). Seafood will be the hero of the weekend, with Brent Savage and One&Only Hayman Island’s team of talented chefs, showcasing dishes such as Charcoal Grilled Moreton Bay Bugs with Dill and Chilli, Snapper with Clams and Sea Herbs and Beef Tartare with Scallop Crisp, all sourced locally and sustainably.

The weekend commences on Thursday, 27 October with a welcome cocktail party overlooking the pool at Aquazure hosted by Nick Hildebrandt, Brent Savage and General Manager One&Only Hayman Island Scott Williams Here, guests will enjoy an array of innovative canapés, a Bentley cocktail on arrival and Rathbone Wines served throughout the evening. On Friday, 28 October, an indulgent five-course degustation dinner will be held with exceptional local produce prepared masterfully by Brent Savage, matched to wines chosen by Nick Hildebrandt from the Rathbone stable. Finally, on Saturday, 29 October, guests will enjoy a tantalising Seafood Buffet dinner at Pacific with paired wines from Rathbone, against the backdrop of the Coral Sea.

The Bentley Boys Return to Paradise Weekend at One&Only Hayman Island will take place from Thursday 27 October until Sunday 30 October and is priced from AU$1,600 per night for two guests; a minimum three-night stay applies.
