One&Only Hayman Island will collaborate with the talented ‘Bentley Boys’, Brent Savage and Nick Hildebrandt, from 19 to 21 June, to create a weekend of epicurean indulgence in the heart of the Great Barrier Reef.
Together with the chefs of One&Only Hayman Island, Brent Savage, the current The Sydney Morning Herald Good Food Guide Chef of the Year, and his business partner Nick Hildebrandt, the Australian Gourmet Traveller Sommelier of the Year, will create a Whitsundays version of their Sydney restaurant group - Bentley Restaurant & Bar, Monopole and Yellow - and take island guests on a journey of food and wine, featuring the unique modern food that has made the Bentley group famous.
With seven diverse restaurants and bars, each with rare character, Australia’s most comprehensive on-island cellar and One&Only bespoke dining experiences, One&Only Hayman Island is a gourmet haven. The Epicurean Escape will commence on Friday, 19 June, with a ‘Monopole’ casual dinner at Aquazure, perfect for mingling and set against the stunning backdrop of the Coral Sea, with sunset cocktails and a menu inspired by Brent and Nick’s renowned Potts Point wine bar and eatery. Monopole’s House-cured wagyu pastrami with goats curd and pickled cucumber and slow-cooked octopus with green herbs and fennel salsa will be on the menu, and will be paired with wines and cocktails from Monopole’s legendary list.
On Saturday, 20 June, Nick Hildebrandt will host the ultimate island Wine Masterclass in the afternoon (1pm to 3pm), taking guests on a fascinating journey of wine discovery of his favourite wines from the One&Only Hayman Island cellar. As the sun goes down, guests are invited to the ‘One&Only Bentley Dinner’ at Pacific, overlooking Hayman Beach, the highlight of the weekend. Brent and Nick will work with the island team to create an unforgettable evening, showcasing Bentley’s contemporary cooking style, with its modern techniques and diverse Australian flavours, with a menu featuring Rangers Valley wagyu with black olive, mustard and fennel and Lobster with celtuce and brown butter. Nick has plans for some creative food-wine pairings and will serve some truly extraordinary wines. “I know that One&Only Hayman Island has an extensive wine list, and Brent and I are looking forward to working with Karim and his team in creating some exciting pairings, as well as adding a new spin to some of our signature favourites,” commented Nick Hildebrandt on the upcoming events.
