One&Only Ocean Club Welcomes Acclaimed Chef Mads Refslund For A Weekend Of relaxed Revelry And Extraodinary Cuisine

Paradise Island, The Bahamas, (February 2, 2016): Long recognized as one of the world’s most exclusive resorts, the iconic One&Only Ocean Club will welcome celebrated Chef Mads Refslund for a three-day culinary experience. 

What:
Chef Mads Refslund, formerly of ACME in New York City and Noma in Copenhagen, Denmark, will head for the beach this Valentine’s Day Weekend to take over the kitchen at the brand new Ocean Pool Grill. Three decadent feasts will be served, featuring Chef Refsluds’ unique cuisine, while a DJ spins enhances the island vibes.

Dinner Menu:
For dinner on Friday and Saturday night, guests will indulge in three courses of plentiful family-style dishes such as (and many more!): 

Young Coconuts with Red Snapper and Spicy Cucumber
Lamb Tartar with Sunchokes and Sunflower Oil
Rock Lobster with Grilled Leeks and Citrus
Slow Grilled Pig with Spicy Cabbage and Pineapple
Day Caught Grouper with Beans and Tomatillo 

Valentine’s Day Brunch:
This indulgent brunch will feature three courses of shared items including: 

Cantaloupe Melon Gazpacho with Spicy Cucumber and Cilantro
Fatty Tuna Tartare with Avocado, Yuzu and Sesame Soy Vinaigrette
Cast Iron Eggs with Slow Roasted Tomatoes and Chili Peppers
Free Range Chicken with Grilled Hearts of Romaine and Sweet Onions

About Chef Mads Refslund:
Chef Refslund began his career in Copenhagen, Denmark at Michelin-starred restaurants Formel B, Restaurationen, The Paul, and Kokkeriet, and earned global acclaim for his cooking at Noma and Restaurant MR. In 2011, Chef Refslund moved to New York City where he opened ACME, a seasonally-driven New American restaurant with subtle Nordic accents. An advocate for New Nordic cuisine and a terroir based kitchen, Chef Refslund is currently working on a book about food waste and researching for his new restaurant project.
