 Shrimp Enchiladas


Add the oil to a deep casserole dish and bring to a medium heat
Add the onions and sauté for one minute 
Add the garlic and sauté for another minute
Add the tomatoes and peppers and reduce heat to low
Add a pinch of salt and pepper 
Cook for 15 minutes
Leave to cool, then blend the mix
Strain through a fine strainer 
Taste for seasoning and add more salt if needed
Season the shrimps with salt and pepper
Heat up a pan and cook the shrimp
Add the garlic and cilantro 
Bring the adobo to a boil
Combine three tablespoons of adobo with the shrimp
Chef’s Tip
For even better taste and presentation, I suggest you warm up the tortillas first, then add the stuffing and roll them before placing on the plate. Top with adobo and finish with a garnish of sliced onion, diced fresco cheese, sour cream and chopped cilantro.


6 oz Pacific blue shrimp
1 teaspoon garlic
1 teaspoon cilantro
3 tablespoons adobo 
Salt and black pepper to taste

To serve
1 tablespoon sour cream
1 oz cubed fresco cheese
1 tablespoon chopped cilantro 
1 slice of red onion
3 corn tortillas
