One&Only Royal Mirage - Lamb Couscous

LAMB COUSCOUS WITH VEGETABLE

Method

  1. Peel the carrots and cut in half lengthways. Cut the cabbage into quarters. Peel the turnips and cut into quarters.
  2. Cut the zucchini into sticks, peel the pumpkin and cut into large pieces. Slice 250g of onion thinly.
  3. Put the semolina on a tray, and using your fingers gradually work in a little hot water. Pour some argan oil into your hand and spread it through semolina. Once more, rub the semolina through your hand.
  4. Fry the lamb in the lower part of the couscous steamer. Add the onions, cover with water, and bring to the boil. Add salt and pepper.
  5. Place the semolina into the top part of the couscous steamer. Place the strainer on top of the pot. Cover and steam the semolina for 15 minutes.
  6. After 15 minutes, add ginger and saffron.
  7. Add the carrots and turnips into the meat. Add a large glass of water, steam the semolina in two stages of 15 minutes each and between the stages, work in a little cold salt water and oil.
  8. Once the vegetables are half cooked, add zucchini, halved tomato, pumpkin, cabbage, parsley and coriander. Continue to cook the semolina.
  9. Arrange in a dome on a serving platter.
  10. Serve jus on the side.

1.5kg Lamb shoulder, diced
500g Carrots
500g Turnips
500g White cabbage
500g Zucchini
250g Pumpkin
500g Onion
2kg Couscous Semolina, medium size
100ml Oil
2 tsp Salt
500ml Argan oil
1 pinch Ginger
1 pinch Moroccan saffron powder for colouring
500g Tomatoes
1 bunch Flat-leaf parsley
1 bunch Coriander
Salt and Pepper to taste
