Citrus and Fennel Salad

Method

  1. Place citrus segments around the base of your dish
  2. Sprinkle the green olive onto the citrus segments
  3. Remove the fennel from the ice water, and drape over the segments along with the mint and dill
  4. Mix the chilli, olive oil, and citrus juices, spoon liberally over the arranged salad, season with the pink salt
  5. Lastly arrange the rocket lettuce on top

Ingredients

1 Chilli – finely diced
5 Green Olives – pitted
1 Ruby grapefruit – segmented, juice retained
1 Blood Orange – segmented, juice retained
1 Orange – segmented, juice retained
30mls Extra Virgin Olive Oil
Pinch Pink Salt Flakes
1/2 Baby Fennel Bulb – finely shaved – placed into ice water
Fresh Dill
Fresh Mint Sprigs
Baby Rocket Lettuce to garnish
